With roots deeply anchored in the Napa Valley, William Hill Estate crafts luxury Chardonnay and Bordeaux varietal wines from the undiscovered vineyards of California’s most celebrated regions. Beginning with William Hill Estate’s 140-acre benchland vineyard near the Silverado Trail, Winemaker Mark Williams turns to the hidden corners of southern Napa, the North Coast and the Central Coast to create a unique collection of rich, expressive wines. WINE TASTING NOTES Our William Hill Estate North Coast Chardonnay offers aromas and flavors of ripe tree fruit, underscored by hints of brown spice, citrus and tropical fruit. Hailing mostly from Sonoma and Solano, with a touch of fruit from Mendocino, this well-integrated wine has excellent acidity and a creamy mouthfeel. WINEMAKER NOTES The grapes for our North Coast Chardonnay were harvested between late August and mid-October, and then gently whole-cluster pressed. After settling overnight, the juice was racked and inoculated with yeast strains D254, CY3079 and EC1118. A portion of this wine was fermented in stainless steel tanks at a maximum temperature of 62°F, with the balance fermented in barrels at an ambient cellar temperature of around 65°F. This wine underwent malolactic fermentation and sur lie aging to impart a creamy mouthfeel.
