Fresh and vivacious style. Showing powerful aromas of red fruit (raspberry, redcurrant) and showing fine bubbles and pale rose colour. Ideally for an aperitif but it will also match perfectly desserts made with red fruits and chocolate. Pinot Noir with a hint of Gamay. Harvested at the very beginning of September, the grapes used for Cremant de Bourgogne already displayed a very high aromatic potential, whilst retaining the acidity necessary for their freshness; both of which can now be detected in the wines. In 1840, Jean Febvre, a barrel cooper from Montbard, founded the winery that is now Maison Simonnet-Febvre. It was exclusively specialized in the making of sparkling wines using the so-called “Traditional Methood”. Maison Simonnet-Febvre is today the only winery in Chablis that produces Cremant de Bourgogne. Maison Simonnet-Febvere bought out in 2003, now produces 3 categories of wines: Chablis wines, Cremant de Bourgogne and wines from Yonne vineyards, commercialized in France and all over the world.
