Light straw in color. Citrus and floral aromas are underscored by minerality. Fine and delicate but persistent perlage with a lively acidity, medium body and a lasting finish. 100% Cortese Rugrè is La Scolca’s youngest, traditionally made Sparkling Cortese. The name refers to the oak forest that surrounds the estate’s vineyards. Rugrè is sourced from the Estate’s young vines (under 20 years old) with yields of under 80 quintals per hectare. Vines are planted in soils of volcanic origin, composed of calcareous-clay with veins of chalky limestone similar to that found in Champagne and Chablis, giving the basic wine a characteristic flinty character. Hand-harvested fruit is brought to the winery after 5-10 minutes, where it is sprayed with dry-ice. Cryo-maceration, cold fermentation (13-14?C) in stainless steel tanks and the use of natural yeasts preserves the Cortese’s subtle fruit, flinty acidity and structure. After the base wine is produced, the young Cortese wine sees secondary fermentation in bottle with just three to four months of yeast contact in order to maintain the delicate character of the fruit. Two lots are produced a year (Winter and Spring).
