Description
From a steeply sloping southeastern facing hillside at 1000 feet, with miniscule yields, we harvested November 5 by hand, at dawn, and performed a vigorous sort prior to fermentation in a temperature controlled stainless steel tank for 21 days, followed by malolactic fermentation in barrel. 86% Cabernet Sauvignon, 12% Merlot, 2% Petit Verdot. Sorted by hand, destemmed and partially crushed, followed by 21 days in a temperature controlled stainless steel tank.
