Description

Tasty, elegant, it’s characterized by an important structure and good balance between alcohol and acidity. Straw yellow with light golden hue. Offers a wide range of aromas, especially of green apple, exotic fruit, and honey. 100% Pecorino (An ancient Autoctonous vine) The grapes are crushed and destemmed; the juice is clarified through settling cold overnight and then inoculated with selected pure yeast. Fermentation and storage in stainless steel vessels. No oak. Pecorino is native of middle Italy and mainly of Marches, Umbria and northern Abruzzo. This vine variety prefers quite high hilly sites and ripens early, during the first decade of September. The reason why it shares the same name as a widely reknown cheese is uncertain, but it probably relates to shepherds’ seasonal travels from the mountains to the hills in proximity of the coast, across the vineyards where Pecorino vintage was already in progress. Its low production performance brought winemakers to quit its cultivation and prefer more earning vine varieties. Perfect Pairings Ideal with seafood hors d’oeuvres, fish and white meat dishes.
